What We Ate | June 30-July 6

We love strawberry and blueberry shortcake!
William and George got lots of good leftovers this week from all of Mom and Dad's dinners. They weren't fans of the roasted sweet potato, fennel and apples, but I was able to puree it into their smoothies and they sucked it right down.

Tue: leftover corn chowder with rice; Cider-Dijon Pork Chops with Roasted Sweet Potatoes and Apples, recipe
Wed: Cajun Creamy Pasta with Peppers and Smoked Sausage, recipe, with peas and leftover pork
Thu: leftover Cajun pasta, leftover (from lunch) salmon and roasted vegetables, cottage cheese
Fri: (4th of July) Sausage, bread, corn on the cob, watermelon
Sat: Texas Caviar, recipe, chicken, pasta (didn't eat much)
Sun: Monkfish with roasted squash, recipe, pasta (LOVED the monkfish)

New fruits/dessert:
Strawberry and blueberry shortcake (4th of July!), recipe
Healthier Peach Crisp, recipe


New breakfast:
Mini frittata, based on this recipe (but used cottage cheese instead of milk, added bell peppers, spinach, prosciutto, chives and different cheeses)
Weetabix with berries and milk

New lunch:
Whole wheat flatbread with with sweet potato puree, pork (leftover from dinner) and cheese

New snacks:
Almonds and dried apricots (weren't into initially but eventually finished)
Baguette with cream cheese
Texas caviar
Waffle with almond butter (often have for breakfast)

watermelon, apricot and raspberries
berries, banana and leftover roasted vegetables (sweet potato, fennel and apples) from the pork dinner - they liked it!
