What We Ate | September 15-21

Dave was out of town for a few days and over the weekend, so I tried out a several recipes for the boys and I. The surprise hit was Spaghetti Chicken Sausage Pie. I had doubts, but it turned out so well. Megan and Ashely came over for a last minute girls night in on Saturday night and we polished off the leftovers. Maybe it was because it was the third night of practically the same, but the boys did not go for plain spaghetti squash topped with chopped up hummus turkey burger and spaghetti sauce (same sauce I used in the previous dish).

Dinners:
Mon: Moroccan couscous and salmon (recipe), green beans
Tue: Shrimp quinoa fried rice (adapted from this recipe; added shrimp, summer squash)
Wed: Leftover quinoa fried rice, hummus turkey burgers (recipe), carrot pancakes (recipe)
Thu: Quinoa, turkey burger, carrot pancake
Fri: Chicken sausage and spaghetti pie (adapted from this recipe; substituted red bell pepper for mushrooms), green beans
Sat: Chicken sausage and spaghetti pie (adapted from this recipe; substituted red bell pepper for mushrooms), green beans
Sun: Leftover salmon from salmon sandwich (loved), spaghetti squash with tomato sauce and turkey burger - didn't touch

Black bean, cheese, turkey burrito

Healthy peanut butter bars (adapted from this recipe; just raisins/no chocolate or chocolate chips)
Teriyaki seaweed snacks (a little iffy about these)
Pita chips/crackers with spicy hummus
Carrot pancake (recipe)
Baguette with almond butter and chia seeds
