One-Pot Creamy Pumpkin Pasta

Don't worry, pumpkin overload once again and showing no signs of stopping. Both boys loved the pumpkin pasta and pumpkin muffins. George looked like he was going to try the pumpkin bars several times, but never actually did. So William got two each night instead :)

Dinners:
Mon: Chili Con Carne Stuffed Sweet Potatoes (as listed here)
Tue: Leftover Mac and Cheese with Pumpkin Pork Chili (recipe)
Wed: One-pot Creamy Pumpkin Pasta (recipe, added pancetta)
Thu: Leftover pasta, Trader Joe's carrot balls
Fri: Leftover pasta, tofu
Sat: Chicken*, tofu, leftover pasta
Sun: Israeli couscous, salmon, edamamae, cottage cheese

*Served to the boys before finishing for mom and dad: Honeyed Sriracha Chicken Wings (recipe) served with Fried Cauliflower Steaks (recipe), perfect for a night in watching the Giants win!

Sweet potato pancakes (recipe, inspired by all the extra sweet potato I had leftover from the chili-filled potato skins)
Pumpkin crumb muffins (recipe, not necessarily healthy, but really good)

Uncle Sam's cereal with milk

Freeze-dried cranberries, so tart, but they still ate them!
