What We Ate | Oct. 27-Nov. 2

Once you see the below, you'll note that they ate leftovers of leftovers for the majority of the week. In fact, the pumpkin pasta dish made so much (9x13 pan) that I just finished it for lunch yesterday. Ironically, I somehow didn't get a picture of one of the 8 different meals it seems like we ate it for. Oh well, the boys loved it.

Mon: Leftover salmon, Israeli couscous, fried cauliflower
Tue: Leftover fish and garlic noodles - didn't really eat/weren't feeling well
Wed: Pumpkin Ricotta Pasta Casserole (recipe; added pancetta, made a ton)
Thu: Leftover pasta, carrots
Fri: Leftover pasta, peas
Sat: Smoke Sausage, Kale and Cider Quinoa skillet (recipe)
Sun: Pumpkin pork chili (recipe) tofu, peas - didn't eat much

Baked Pumpkin Steel-Cut Oats (recipe; I just used regular old fashioned oats)
Buckwheat crepe with ham and cheese

New snack:
Chewy Peanut Butter Apple Granola Bars (recipe)
Cranberry-orange rounds (Ozary Bakery brand) with almond butter

Quesadilla with roasted carrots, turkey and cheese (they picked out most of the carrots)
Roast beef

New fruit/dessert:
Pumpkin 5-spice ice cream from Humphry Slocombe
Halloween candy -- tried a 3 Musketeers and M&Ms
