What We've Been Eating

We've been taking full advantage of having a completed kitchen and the boys have been enjoying helping from the tower. Though I haven't been as good with photos of all the different meals, it seems like we have new stuff every week. I'm always searching for new recipes, though menu planning definitely takes time. I keep telling myself that I'm building out my own recipe box of favorites in my Delicious feed, but I still am always searching for new recipes and rarely going back to old ones (even favorites).

The boys only eat what we eat. Well, I should rephrase that, they're only offered what we eat. Sometimes they eat, sometimes they don't. Of course I'd like them to eat, but I try not to care. If they at least taste it and behave at dinner, then they're offered cottage cheese and possibly applesauce if they at least ate a little bit. If Dave is home and they didn't eat, then they'll get a nice bowl of berries too. I'm definitely stricter and if there's any attitude, food-throwing or excessive whining, dinner is over. Milk is always offered. I haven't noticed any difference in their sleep (waking up early because they're hungry for example) but them not eating (or eating well) at dinner. Obviously if I did, then it would definitely be more of a power struggle to get them to eat a bit more. I'm really trying to avoid that.

Here's a taste of what we've been eating:

Green Chickpea and Chicken Coconut Curry

Meatball Tortellini Soup (used ground lamb)

Lentil Chili (I added sausage and white beans)

Quinoa chili

Quinoa chili (definitely added my favorite chili ingredients)

Crockpot Corned Beef for St. Patrick's Day

Quinoa 'Fried Rice' with leftover carnitas pork

Roasted Garlic Soup

Yogurt Tart with Oat Crust

Mac and cheese based on this recipe

Prime rib tacos (leftover Coffee-Rubbed prime rib, below)

Shrimp Etouffee

Asian Quinoa Meatballs over noodles

Coffee-rubbed Prime Rib

Braised Pork Ragu (used with leftover carnitas)

Others not pictured:
Chicken Tikka Masala with Instant Naan
Black Magic cake for Uncle Jon's birthday
Poached Halibut in Thai Coconut Curry Broth
Mini Taco Stuffed Peppers
Baked Honey Mustard Chicken
Slow Cooker Chicken Tikka Masala
Garlic Brown Sugar Chicken
Crockpot Sunday Sauce

We never used to eat chicken, or at least very rarely, but I've found so many new recipes that it's now a weekly thing. I'm loving chicken thighs, a lot more flavor (not quite as healthy as the breasts, but I'm fine with it).
